Carpigiani Gelato University is an international educational institution dedicated to the art and technology of authentic Italian gelato production. Founded in 2003 in Italy, it represents one of the leading schools in the world for training in artisanal gelato making. Its programs are designed for both beginners and professionals, combining theoretical knowledge, practical production, as well as business and technological aspects of gelato manufacturing.
Today, the university operates through a global network of educational centers, and its training is also available locally through Inova Gastro Academy in Panvel. This collaboration enables participants to acquire top-level, internationally recognized skills and knowledge in a local environment, working with modern equipment and following the standards of Italian gelato tradition. Upon completion of the program, participants receive a globally recognized certificate.
In the period from March 23rd to 27th, the first gelato master course based on the Carpigiani Gelato University program was successfully held at Inova Gastro Academy in Panvel. This first generation consisted of 9 participants who, through an intensive five-day program, mastered the key fundamentals and advanced techniques of gelato production – from understanding raw materials, bases, and production methods, to creating fruit and milk-based gelato, as well as recipe analysis, ingredient balancing, and practical production. The course also included work with modern equipment, various production systems, and a final assessment, providing participants with a strong foundation for a professional career in the gelato industry.
